So I cant give the rub recipe but I like the turning of ribs on the UDS

cut off all ports and plugged gap on onlyfire ring and UDS
Everglades Mop sauce to finish

not heard of these ribs
From Wikipedia:
"Country-style ribs are cut from the blade end of the loin close to the pork shoulder. They are meatier than other ribcuts. They contain no rib bones, but instead contain parts of the shoulder blade (scapula)."

CSr's are nice and meaty and you can make like a rib or cook like short rib and braise, you can do a lot with this cut and they are mighty tasty! Some times i like to cut them up an make meat candy out of them!

Richie, Note on rotic ... There is an air gap between the UDS and the rotic unit. you will want to fill that gap with foil or stove gasket material. So I start with 1 air port open and let the uds smoke the ribs until the UDS hits 250F-ish then I close the port and about 300F (2.5hrs) I apply foil in gap so heat drops.

Rotating them keeps them super moist even if they get up to 214F like mine...
