I feel that JJ is right if you only let it sit a couple of hours. I do all my injecting and seasoning the day before i smoke. So i don't want vinegar in my injection
I am going to Buck the Tide here and say, there is no reason you can't but you should only let the meat rest no more than a couple of hours before Smoking. Beyond that the Vinegar will start denaturing the Proteins and as the guys stated above the meat will gut mushy. You might consider cutting the Vinegar with some Apple Juice, if too sweet for you any liquid will do, to reduce the overall acidity...JJ
