Brisket on the LSG

Well this time the app behaved and worked properly.
Turned grill on at 8:00pm
Put brisket in at 9:00pm
Started the program in the app.
1) 160f for 90 minutes
2) 275 until IT reaches 203
3) Hold at 180

About 165f, pulled it, wrapped in foil and back in.
Pulled it out at about 9:00am - 12 hr cook.
Caveat - at 8:00am bumped temp to 300f to make sure it would be done in time for lunch.

Came out nice and juicy. Just S&P on it.
Bark would have been harder if I didn't wrap it.

Not the best brisket I've bought, guess that is why it was on sale for $2.77/lb.

Had a little problem with the buns.
The battery in the timer died, and by the time I noticed it, the buns had over-proofed and were collapsing. :emoji_disappointed:
Baked them anyway. At least they still tasted good.

Lunch was still good.
Added some green chilies and some of Jeff's Golden Driller sauce.
