Hi All

I have been given 5 kg of Pakers Jam, a Spanish dry cure, but it came with no instructions ! Apart from En salazones carnicas por frotamiento de las piezas. Vease informacion complementaria.

The make up is, Composicion: Sal,azucar,nitrato potasico E-252(4.5%),nitrito sodico E-250( 1.8%), acido ascorbico (E-300).

Please can anyone help!!!

That's definitely for a dry cure by the amount of nitrate. the E-252 is potassium nitrate, 250 is sodium nitrite and the E-300 is ascorbic acid.
Like Martin said, head over to sausagemaking.org and ask them. to me that's an odd mix.
