We've only been shopping every 10 to 12 days, so it's a roll of the dice to see what meat department treasures are to be found. On Thursday Mrs ~t~ found a 5-bone rack of back ribs, and I smoked them yesterday.

I did season them the night before since I like to get them on the pit by 9am. Here they are after 2.5 hours in a 250° drum using cherry and hickory flavor wood and lump charcoal.

Another 1.5 hours and they were ready to wrap. I put down a bed of sweet onion slices, then added some Minors beef stock.

And here is the finished product.

Those back ribs look amazing!! Bark is beautiful and man are they juicy. Nice job!! How did you embed the video?

Thanks for the kind words, they were like brisket on a stick.
I use Imgur as one of my hosts, and each image or video, or GIF has several options for linking. I used the 'Image Link' and just pasted the code as is on it's own line in my post. When I post a photo using the insert image feature (above), I paste the code from the 'Direct Link' option.
