I have been cooking briskets and beans for a birthday party for a 90 year old lady that lives in the community. I started last night by seasoning and putting 2 cases of briskets (12) into my Southern Pride smoker. I put them on at 7:00 PM last night @ 200*. I checked temps at 10:AM and they were in the 175* range. It is now 2:30 PM and they are in the 190* range. In about another hour they will be ready to rest. Pics will follow.
Briskets were rubbed with mustard and seasoning, then placed into the smoker. I did not do a good job of taking a pic of the cut up brisket. Things seem to get a little hectic about that time. The guest of honor, and more seasoned briskets in the smoker.
As for the left over briskets, one man took 3 to take to some oil drilling rigs and another took the rest as he is going to Musquz, Mexico next week for some missionary work.
