I was at the local Italian Market and they had some nice Sirloin Tip Roasts so I picked up one that is almost 4 pounds.


Put some worcestershire sauce on it and some Salt and Pepper and let it sit over night.


Today I put it into the smoker at 250° with mesquite chip


Here it is after cooking for just over 2 hours


Put it into a hot CI Skillet for a nice sear on both sides with a Temp of 121° now it is resting before I slice it up.


While waiting for it to cook I organized my pellets/chips. I picked up these tubs for $1.20 each today. 


I will post a slice up pick in a bit.

Part of it will be sliced up for Sammies. With my son away at college this is dinner tonight and lunch tomorrow with half of it put away for another two meals.

It came out really good.

The reason I had asked is I always slice it thin because it's always too tough, but sliced thin it melts in your mouth.

Makes Awesome "Rare Roast Beef Sammies".
