3 finger thing that came with meat grinder

This item has 3 fingers. Same size that the meat plate has. It is not a blade. What the devil is it for. Can't find any thing about it.

I'm guessing it's the stuffing plate for stuffing sausage.

Thats called a stuffing star.

This goes in the grinder. You dont use a blade or plate.
The star holds the auger, the end of the auger shaft goes into the hole of the star, the plate nut (the tightener in front that screws to the front of the plate) holds the star tight. Thus not needed the blade or plate...NOTE: You will have already ground the meat, the star is used for just stuffing thru the tube.
