    Newbie Buying first smoker

    I own the Brinkmann Trailmaster. It's going on 2 years now and I am still glad I made the purchase. I'm a stick burner at heart so that's why I went with an offset smoker. It does a fine job. If you choose this model, just remember to seal every joint, bolt hole, etc up with a high temp RTV...

    Whole Pork Skin not edible

    A local bbq place pulls the skin off and returns it to the direct heat side of the block pit to crisp it. They sell out of bags of skins quick.

    Kroger Brand Chickens

    I smoked some Kroger brand leg quarters (the ones in the red white and blue packaging) about 2 weeks ago. Had really good results. Didn't brine...just rubbed with EVOO and rubbed with Rendezvous rub.

    I often prefer a good pork steak over a beef steak. Local grocery store cuts pork steaks about an 1" inch thick. Man, they turn out so juicy.

    I add chunks about every hour and a half. Usually 2 to 3 softball size chunks to the bed of coals. When using split logs, it just depends.
