OK ... Here is how I was taught ( and have nothing but good compliments) to prepare the ribs.

Second slather mustard or olive oil (I use mustard) to use as a binder and then generously apply your dry rub.

Did two racks this weekend, 3_2_1 method, after 3 hours wrapped and basted with 8oz apple juice per rack.... Used the top rack of a two rack UDS. Never used a rib rack, have no reason.
Be interested to know how much restriction and if one could step up the pipe size and regain that which is lost. In realty the ball valve even restricts some.

Trying to fix a perceived airflow problem on my UDS that was built by Norco's recommended plans back at the first of the thread.

1. Mags will be fine for the inlets with no ball valve , save beer money for pipe nipples and ball valve to add later.

That was a dry run and never having had a UDS before I really didn't know what to expect. A few days later we did two racks of ribs,, set the ball valve @ 1/3 and 1 capo open and it ran @ 225 for 6 hours steady.
This is a time line and temps on the smoker.
