    About keeping proper temp.

Say you want to keep your temp. at 225. How much can you safely go over or under 225 while trying to get back to 225? I am going to try a boston butt using charcoal for the first time and hope it works for me. THANKS

    Thermometer Placement

Being new to smoking and having a brand new char griller I have a question. As most of you know, my grill has a thermometer in the lid. I understand that you cannot go by the temp this gauge displays. I want to place my temp gauge where it will do the most good. I would welcome any advise. Thanks.
