I made up a trial batch of honey brats today and they were great! I used about 2/3 the amount of corn syrup and it was about right. The honey added a little flavor but not too much at all.

I make brats using a len poli recipe I believe and they're great! I use corn syrup which is what the recipe calls for but I was thinking about using honey instead. Would the honey work well?

Awesome! Just browse thru the pages of a sausage book. That usually gets me stoked about making a half a dozen different sausages!
A lot of woods go well with deer sausage. A lot of it is personal choice, IMO. I usually use hickory and cherry. Sometimes add in some oak. Or some apple.
You will need to thaw out the meat before smoking. Otherwise, it won't cook properly/evenly.

I guess really a person should do whichever gives them the most efficient use of space in their smoker. Some aren't really tall enough to hang effectively and vice versa. To me, sausage should be hung mostly because that's the way its been done historically. I'm sure it will be fine either way...
Hey, I made up a batch of sausage last weekend. I made a couple slight changes and it came out better than ever! Here it is:
This is for 15lb batch. 10lb deer, 5lb pork.
Grind meat thru 1/4" or similar plate, then grind again thru 1/8" plate.
Dice 9 jalapeño peppers
1lb block of cheddar cheese...
I too mix and stuff promptly. Even then sometimes I'll add a little ice water if the mix is really thick and I'm stuffing small casings.
