    Smoked capon for Thanksgiving

    I've smoked meat since the 1990's, but never a capon. I bought an eight pound capon and. today I start brining it in Pop's brine and will slow smoke it with pecan wood tomorrow. I will post a pic and let y'all know how it turned out.

    He said that I don't have congestive heart failure. He said that was a misdiagnosis. Yay!

    Pneumonia

    Went to the hospital with pneumonia last week. The pneumonia and 44 years of smoking did a number on my lungs. I have also been diagnosed with congestive heart failure. If you're smoking thinking that you have more time, that's what I thought. It can catch up to you Suddenly.

    The time I made my own barbecue sauce

    I once decided to make a honey barbecue sauce for some country style ribs I was planning to smoke for a barbecue. The sauce turned out excellent. People raved about the ribs and said that I should open a restaurant. Now to the funny part. I do not remember how I made it. 😆
