    How is Alder Wood for...

OK, thanks... seems fish, especially Salmon, is a favored meat for this type of wood.  My guests are not fond of heavy smoke flavor, such as Hickory so maybe I'll be OK in this case.  I'm just debating on scrapping the Alder all together and using Apple.

    How is Alder Wood for...

Hi Gang, Feeling like I was possessed, I purchased Alder wood for no particular reason to use with a turkey breast and BB ribs for Thanksgiving.  Has anyone used this wood and how do you feel it would work for these meats? Thanks! Jeff

    Ribs... on the go??

Good afternoon, smokers… Something I’ve struggled with over the years is preparing ribs for transport. Is it realistic to think I could smoke ribs and then bring them somewhere to be “reheated” the following day? Thanks for the input. Jeff

    Brewing an Ale today ...

Good stuff! This is something Iâ€8482m dying to try this myself – I mean, Iâ€8482ve been drinking it long enough! Good luck with the batch Bombo. Is this something that will be ready relatively quickly or is there a waiting period involved like wine? Whatâ€8482s the secret to a tasty dark...

    Silver Smoker Mods

Good afternoon: These are great resources. Thanks for posting! I do have a specific question, which may be addressed in these posts but I may have missed the answer, how does one add a thermometer to the Silver Smoker and is it worth it to do so? How well do these thermometers report the...

How many here from your state?

Good afternoon: Well, Iâ€8482m a bit disappointed to report that Delaware has a whopping 8 member (myself included). Iâ€8482m a transplant from Philadelphia and Iâ€8482m located in the northern parts of Delaware. I love the area; however I donâ€8482t feel Delaware has any foothold on food at...

    Silver Smoker Mods

Good afternoon: I apologize if this is a redundant post, however Iâ€8482m looking for the various Charbroil Silver Smoker modifications that I read about in older posts. The links I encountered earlier were broken. Maybe there are some more recent threads. Thanks! Jeff

    Give her a Haggis!

Good afternoon: Iâ€8482m glad to see we have some “Scotts†on board! I have a great Scottish pub around the corner that has a full blown Burns Supper and Feast of St. Andrew each year and its great fun. Amos, I look forward to your report on the meal. Now, will you have any single malt to...

    Needing A Little Help

Good afternoon, Yeah, I don't dispute the fat ratio between flank steak and Top Round. It's just that I've had pretty good success with Top Round. Good luck! Jeff

    Give her a Haggis!

Good afternoon, Has anyone prepared Haggis or Hogs Maw with a smoker? If so, give us the “highlight reelâ€, recipes, etc. (pictures would be awesome!) Take care, Jeff

    Needing A Little Help

Good afternoon, I was once the proprietor of Smokestacks Almighty Beef Jerky here in Wilmington, DE. We made some of the best Jerky imaginable, which I still make for my family and friends however Iâ€8482ve retired from the business aspect of the product – Iâ€8482m a cook, a glutton but not a...

What did you get for Christmas

Good morning everyone, itâ€8482s been a while since Iâ€8482ve posted a message but my smoke has rolled on. Quite frankly the smoke has rolled on more so throughout October, November and even now in December than I wouldâ€8482ve guessed (first year smoking, so technically first winter with the...

    RIBS and CHICKEN

Hello everyone – thanks for all the comments, being new to the SMF, posting the pics, telling the tale and reading the follow-up has been almost 40% of the fun! My wife was actually reminding me to take the pictures, which I thought was very cool. As for the extra hour, me papa is a Juvenile...

    RIBS and CHICKEN

Good morning! I havenâ€8482t had a chance to read too many SMF messages today but I can only assume Iâ€8482m only one of many fathers settling down after a scrumptious Fatherâ€8482s Day feast. Our menu consisted of 2 whole chickens (3-3 ½ lbs.), 2 racks of pork spare ribs, quartered red...

    Wood and lump charcoal?

Good afternoon friends, I have a smoke planned for Fatherâ€8482s Day (tomorrow) and typically I use lump charcoal piled in my firebox which has worked well. Of course Iâ€8482ve draped my soaked chips throughout the smoke, however I was wondering how to smoke by only using wood for the fire. At...

    I love food

Good morning friends, I too am new to smoking meats. Iâ€8482m starting with a Chargriller offset smoker and Iâ€8482m very happy with the results so far. I have a wife and son who both love the smoked delights so Iâ€8482m in good company. Although not really smoked, I was the proprietor of...
