    Sauerkraut fermentation time ?

The temp you ferment at will affect it. I make it in the cooler months so the temp is about 68F and I let it go about 6-8 weeks. I don't can it, just make sure the kraut is under the surface level, put a plastic lid on it and put it in the fridge. It will keep for months in the fridge once it...

    English bangers

Instead of rusk I use breadcrumbs and I'm happy with the flavor. The recipe I like uses 10% by weight. I use the heels from bread and let them dry out really well before pulverizing them in a food processor.

    Meat for sausages curing question..

Curing before grinding means you have to cure longer for it to penetrate the meat. If you grind then cure it doesn't take nearly as long to cure. Is there a reason for curing first or is it to safely hold it until you're ready to grind and stuff? I wuld imagine if you're processing an entire...

    Bustin' out salumi this morning

Looks good. If you have too much I could help you out there. Did you get the coppa from teh butcher as is or did you take it off a larger cut?

    Beef Breasola...

I don't have a curing fridge so I use 'dry aging steak wraps' from The Sausage Maker in a normal fridge to do Bresaola & Pancetta. I've been very happy with the results. Check out the youtube channel for Two Guys and a Cooler, he has a video for using them. It is only the two of us in my...

    NEW STUFFER

I have a vertical crank stuffer, works well, doing it by myself is ok. But my shoulders are still in good shape. When you're stuffing sticks do you have a problem with meat oozing past the plunger? For a full tube of meat stuffing into a snack stick I'll get more than half a pound. Replaced...

    Sausage Maker's new stuffers....

For mounting board, is it to make it more stable, slide around less? I got some rubber feet/isolators and attached them using nuts called acorn nuts. These are a kind of cap so crud won't get stuck there. You have to make sure the screws aren't too long or they won't attach right, but I have...

    Substitute for Veal?

Instead of doing math to scale each measurement I use Excel, I like to use spreadsheet to set up the formula. You have to decide on proportions/percents, but you enter how much meat you ended up with after grinding and it tells you the needed weight of herbs & spices. And metric is so much...

Snack Sticks - Check my plan?

For misc. hardware (in the US) I love McMaster. Fastenal is also good. I put some little rubber feet on my stuffer and that keeps it in place pretty well and keeps it from scuffing my counters.

    Meat grinder

I used a Kitchen Aid attachment for quite a bit, but I've been grinding 10-20lbs at a time and it was getting rather warm while using it. I didn't want to kill it and have to replace it so got a stand alone grinder. And it wasn't feeding as well as I would like. Watching instruction videos...

    Rum Injected Ham

Has anyone tried combining rum with the initial cure solution to make a ham? I'd probably cook off most of the alcohol first but would prefer to use real rum rather than a rum flavoring.. I even have some rum on hand already for making pear butter (jam).

Scoring on free wood in the old back yard.

I'm jealous. I have a neighbor that is planning to take down a crabapple tree and I can get some of it if I help. I got some cherry from my sister-in-law a few years ago. Not quite the amount you're getting though. But my smoker is electric so I don't need so much. I would like a neighbor...

    Smoked Pumpkin Seeds

Ancho powder, some partially smashed garlic cloves (which are also tasty to eat), onion slice or two, salt. Might need a small amount of veg oil to get the seasonings to stick to the seeds. Perhaps some jalapeno or other pepper slices. Bell peppers might work as a go with, don't know if they...

Need an idea for limited ingredient snack stick

Try some without pepper also, to see if it makes a difference with her system. There is a lot of variation in what some people can eat and what bothers them. There are some apps to help track the food and the symptoms to see if there is a correlation. Fatty, greasy doesn't agree. Chicken...

Fresh Sausage (no cure) long term storage?

I was going to say this.  It makes it look better and doesn't squish it out the end of the casing.

    Out of meat sticks.

Whew, when I saw title that you were out of meat sticks I was concerned.  I'm glad you were able to avert the impending crisis.

    Low sodium ham and bacon

I've done 'baked' beans in the smoker.  It takes a long time at 250* but are very tasty.  And you can make them way lower sodium than the canned. Bringing them to a boil on the stove before putting them in will give them a boost.  If you're doing a pork butt, the timing will work out pretty...

    Low sodium ham and bacon

Like CrankyBazzard says, the taste won't be the same.  But you may find you like it.  Enjoy it for what it is, not for what you're trying to replace.  Try a few ways of seasoning it, still do the honey glaze on the pork and smoking it and such..   And you get to keep taste testing.  Gee, darn...

    Pastrami

That sandwich looks really good.  I love pastrami with sauerkraut, swiss and mustard.  But not on rye.  So yours looks just right.  you'll have to email a bite :) I have an approx 4lb piece of brisket in the fridge that is trying to be turned into pastrami.  My 2nd effort.  The first one tasted...

Doing my first brisket - not hopeful

For needing a better knife, try getting a good sharpener instead.  My MIL's economy set of knives were quite dull. Took my power knife sharpener over and they're so much better.  Reminds me, I should bring it over this weekend.  It has been a while. I have a chef's choice and it works really well.
