    Hello from Canada

Kraken is quite tasty. It’s worth a try for sure…plus the bottle is pretty cool. I like dark rums for sipping and white/light for mixing.

Thank you! I have to commend you on your avatar. It really ties the room together. :emoji_sunglasses: Edit: thought it was The Dude until I zoomed in. Either way, your avatar is still cool…hope you find a felt pen or magic marker when you need one. :emoji_laughing:

    Hello from Canada

Might have to pick up a bottle when out that way! I love rum. Right now I’m halfway through a bottle of Kraken. Only east coast rum I’ve had (or at least it was given to me by a friend from NS, not sure I’ve seen it locally yet) is Smuggler’s Cove.

Thanks everyone! Here’s the final result. I have to say that cardboard makes a great stack extension (even held up in the rain!).

It was supposed to be just 6 back ribs and the pork shoulder but my first stop didn’t have backs but great looking sides. Then I had to stop at a different place later I. The day and they had backs on sale. So, I decided why not both?

    Need more room

I have 6 side ribs and 6 back ribs on the OKJ Highland. I also have a whole pork shoulder but not enough room to cook it all so the shoulder is going on tomorrow. I originally used some rib racks to stand the ribs up on their edges during the first 3 hours in the smoker, but ditched the racks...

    Building replacement racks, need opinions

Definitely going to do a cardboard template first. I’d hate to get all that welded up and not be able to use it properly. Thanks for the tips! I really like that shelf and the J channel looks like it would make it easy to slide the racks in and out with no edges to drag on the guides. I will...

    Hello from Canada

Excellent, thanks! Will be heading out East later this summer. Looking forward to seeing the east coast. We’re headed to PEI but if I get the time I’d like to take a little detour to NS. always wanted to go there (and a tour of Keith’s wouldn’t make me mad).

Have you ever flipped your grate so the angle creates a lip? I haven’t seen it done but it seems like it should work fine. I’ve had the occasional burger slide off the back if I get too aggressive with the spatula—hotdogs and sausages get the tongs though LOL. I wonder if people more experienced...

Thanks the reminder! I had that happen on my old Chargriller years ago. Learned that lesson the hard way. :emoji_laughing:

    Building replacement racks, need opinions

I like the little shelf on the side. What a great idea! I was thinking that if I built the grates the full width of the smoker I’d definitely have to angle them into place. So basically rather than slide in and out I’d tilt one side of the rack up, put it into the cooking chamber, then place it...

That’s what I was thinking too. Another idea was to use angle on the sides and back, but flat bar in the front. Not sure how sturdy it would be but angle is tried and true.

Thanks! I think you’re like 4° north, but it still counts! :emoji_sunglasses:
