Master Built 40" vs Bradley 4 rack digital

Sorry if I unintentionally implied there was an issue with your ribs. I also didn't mean to imply I didn't know how to cook ribs in my smoker (or on my grill).  I was simply answering the question regarding rack size and offered my 2 cents on how I cook ribs, as it referred to the question asked.

    Korean Recipes

Very cool. Yeah, truth be told, most of my Korean recipes I'll marinade for several days if I have time. I'm also a firm believer that the flavor is much better if the last few hours of that time is at room temperature. I like the brown sugar idea. I'll bet that's tasty. I'm sure the pork works...

Master Built 40" vs Bradley 4 rack digital

Full size rack of pork ribs, no. Full, uncut spare ribs that I get run roughly 20" in length. My Bradley racks are 15" across with more like 14" of good usable width. I do usually cut my ribs into St. Louis style, which I believe would fit, but I don't use my smoker for ribs (GASP!!!). I prefer...

Master Built 40" vs Bradley 4 rack digital

I've got a Bradley digital 4 rack. Don't have any experience with the MES, so can't comment either way on it. I like the Bradley for the set it and forget it features. I fully appreciate the desire to tend to your smoker as part of the process, but the simple fact for me is there are many times...

    a good bread machine

I've got an Oster, with the features you describe. I got it from my Mom for Christmas 10 or so years ago, so I didn't shop for it on my own. It's gotten a lot of use over the years and is still working great. I use the dough only mode a lot, for pizza dough, rolls, bread bowls and even...

I would like yer mamas recipe please...

If you like your cornbread sweet, you should give the Jiffy mix a try. I personally like it and use it all the time. I do take the option to use buttermilk, instead of regular milk, when I have it on hand. From there, adding stuff you like to it can be very tastey. I like adding a can of...

    Korean Recipes

These are not links, but I wasn't sure where else to post this. Inspired by a spice discussion over in the General threads topic, here are a few of my favorite Korean recipes. My love for Korean food started with a friend's wife, who used to cook for us all the time. Her kimchi (recipe below)...

    My spice source

Check out penzeys.com, too. A friend of mine who does BBQ competitions, pointed me there. I believe they also have stores in some areas as well. It's cool to see someone else into the Korean flavors. We spent 2 years over there and I've spent my time since trying to perfect some of the recipies...

hello all, new member from N.C.

Welcome, neighbor. For your rub research, I'd seriously consider ordering Jeff's recipe. Not just trying to plug the owner's recipes, but his rub and sauce have been staples of mine since I got them. At the very least they give you an awesome starting place. At best, like me, you'll have bought...

Proper way to thaw meats before smoking / cooking

I usually start in the fridge, but I will also sometimes put the brining process to use. With large items, especially, I'll get them mostly thawed, then move them to a cold brine. If I'm brining for a few hours, the water helps the thawing process, even though you're keeping it cool (at least...

I am screwed big time, need help

*** edit, being a newby, they're holding my original post regarding this site. it should be available shortly *** Oh, and if you go with Smugmug, do a search for sendtosmugmug. A guy has written an app that, when installed, allows you to right-click a folder and upload photos as a large group...

I am screwed big time, need help

I've used smugmug.com for years. Their picture sharing options are very good, but I originally went with them because they promote themselves as a photo backup service. They have several different options allowing for uploads of just pictures (unlimited storage), I've recently started using...

    North Carolina Newb

Welcome, neighbor. I'm up in Concord, but drive through your area everyday, taking my wife to work in Indian Trail and heading on over to southwest Charlotte from there. Don't feel like the Lone Ranger on the smoke. My first attempt at smoking was with my brother. We loaded up the smoker with a...

problems with the bradley smoke generator

I'd consider calling Bradley on that. Their number is (800) 665-4188 and they're typically pretty helpful. I searched a bit on one of the Bradley sites and it looks like this could be an issue with the smoke generator timer. If they won't send you out replacement part under warrenty, see if they...
