Well got out my ECB converted to Charcoal smoker out to attempt my first 7lb butt and a batch of Dutch's beans.
Got my temps up to 235 around 8:30 a.m and put the butt on for the day.
I hit my stall at 147 for about 3 hours and then it went to 165 pretty quick. Got it wrapped in foil and...
I plan on doing a batch of beans with a butt next weekend in my ECB. The ? I have is. Would you guys put the beans on the last 2 hours under the butt or leave the beans under the whole smoke?
I gonna attempt my first pork butt here and was wondering the proper name of the cut?
If I just look for a pork butt at the market will I find one?

I think it turned out pretty good. Not sure if I would do another pizza one again but I'm sure gonna experiment making others.. It's was a bit too greasy for my taste.
