I usually dry rub my brisket wrap it in plastic wrap for 24 hours ahead of time. Then take it out of the fridge 3 hours before i get ready to smoke it. This allows the meat to get back to room temp. If you go straight from fridge to smoker it will take that much more time to get the briskets...
