    I just checked it.  The digital on the Unit is showing 257* and my remote thermometer is showing 227*.  So about a 30* difference.  I always base times and temps of my remote thermometer, but how does this relate to getting bark on the meat?  Sorry if this sounds blunt, just new to this and...
