Hi was wondering if you could offer some advice I recently did some cheese myself but need to know what went wrong. I have a cold smoking box that is attached to a small weber type smoker but after chesse was done it tasted well off almost kinda dirty I would say it is fine if used with other things but cannot just cut off a slice and eat it as smoke taste is too strong and not right. Thanks
First off , you need to cold smoke for about 4 hours. Once it is smoked, you need to vacuum seal your cheese and put it in the fridge for about 2 weeks before consumption. If you eat the cheese right after it is smoked, it tastes like licking an ash tray. Wait at least two weeks !!
