It's still humming along at 230-240*

8am and I have hit the foil point on the brisk and butt. Time to get the ribs ready. If they all don't fit I can always turn my gas gril on low and transfer the brisket and butt into it so I can have more room in the UDS

Thanks everyone. The brisket shot up to temp real quick after being foiled.. I sure hope it's still hot after being wrapped in the cooler for 5 hours

Well it looks to me like you are going to have a bunch of really happy folks at your house today. I know I would be really happy to all that fine looking food awaiting to be ate up. You have done one great job there and don't worry about the brisket as long as you pack it tight with towels it will stay plenty hot enough.

thank you.. Next time I go big I'm getting rib stackers (racks) so I don't have to run the oven with an overflow of meat, but other than that the sounds of stuffed faces were all that can be heard yesterday.. SUCCESS :)
