weekend smoke, bake, grind heavy Qview

Saturday was full of baking cookies and lemon tarts, brownies a just plain load of stuff. All for the girls at the wife's work. This years it's food for presents baked goods and some sausage and smoked stuff. Well to start this thing off with a butt rubbed wth some of the rub that I got from Jay "The Dude" in an exchange and this stuff was really good.


It's ready for the foiling just added some spirtz and back you go.

Out rested for a couple of hours in the cooler then a simple pull. Awaiting some finishing sauce.

Here's the wifes first try at the Sour Dough. Heres the kneeds, rises, proofing I don't know something?

Slice to see if it done and the butter awaits. I'm sure it will melt the butter.
Now back to my part of this thread. Some more venison I like this guy he said he liked the last stuff so here some more. This time I would like some differant stuff so I went wit chorizo and salami.

Sorry no stuffing the casing but even with help it hard to stop for the Qview. We were on a roll and flying thur this stuff. Here's the salami with out the dextrose.

Well thanks for watching some of our weekend. I'm like this food for presents thing It alittle more personal and they said that they would love it if it came from our house. They just love the food the wife brings them from the house.

Hey Mark,

Man you are turning out some great stuff there. The sausages look great! I have yet to stuff my first, but maybe over the Christmas break from work. The grinder looks like it is working like a champ!
