Upcoming Tailgate Sausages!!! Q-View

  1. Afternoon!

    Figured I would do a quick post of some sausages I made over the Labor Day weekend for my next upcoming tailgate!  My wife, friends, and I are going to see Jason Aldean this Friday and thought why not...

    So I made about 4 pounds of fresh Medium Italian and 4 pounds of fresh Sun Dried Tomato and Parsley.  

    I did my best to clean the pork butt of the bone, membranes, and such and hope I didn't miss any!  The last thing I want is for some of my friends to take a bite into some nastiness or something chewy! But sometimes it just so damn hard to cut it all out without losing half the weight of the butt...am I right?  [​IMG]  

    Sorry I didn't take many pictures of the grind and stuffing...

  3. Sorry, the tailgate is at the Tampa Bay amphitheater at the Florida State Fairgrounds...aka...MidFlorida Credit Union Amphitheater...formerly known as the 1-800-ask-gary Amphitheater...formerly known as the Live Nation Amphitheater!  [​IMG]

    Don't worry............. I never trim. I grind it all. I've made a lot of sausage and never had an incident. I think its a matter of preference.............

    That parsley sure adds some nice color to the raw fresh sausage. Looks delicious!

  8. Thanks for the compliments!  The Italian recipe is from Home Production of Quality Meats and Sausages by Stanley Marianski.  I'm posted the recipes for both sausages below...enjoy!  I'm way to lazy to type out..
