Unusual chicken tacos

    We wanted to have Mexican food yesterday, but only had basic ingredients.  I saw corn tortillas in the fridge that had been there a long while so we decided on tacos. We didn't have any beef or pork thawed, but did have chicken breast.  We usually use cabbage instead of lettuce because of the extra crisp, but had neither so substituted zucchini sliced into match sticks.  No Mexican cheese, so we grated pecorino.

    Grill grates make for excellent cooking

    Dusted with John Henry's chicken rub.  Had to have a Cosmos to wet the whistle

    The tacos were crisp and delicious! Fresh tomato, onion, and hot sauce.

    Oh yeah, had sausage and eggs for breakfast [​IMG]

    Your tacos look delicious.

    Nice job using what you had.

    But I had to give you points for that view off your patio.

    Nice looking tacos! Zucchini is fairly common in authentic Mexican cuisine. We use it quite often when making fajitas.

    Is the zuchini raw? Never used it in tacos.

    Some backyard you have there. I would never leave the house if i had that. What body of water is that?

    Thanks, Al - we live out of town and only get to the grocery store once in a while - we're going to have tacos again, but are using chicken gizzards

    Thanks! We do like to stay home most of the time, and I like cooking much better than going out. Went to brunch today, and it was definitely not a worthwhile experience.

    It was a first for us as well, and we used it only because we didn't have anything else green and crunchy.  Being raw gave it a great crunch!

    That's Coeur d'Alene lake - relatively small at 100 miles of shoreline (lots of inlets and bays)
