Here we go plated
the left side is the seared one the right side is the non-sear...
I am going to have to do a tri again, as I usually indirectly cook these, and I think I let them go to long, cuz they were not as juicy as I would have liked, or expected. The injection worked in both cases, the port wine was very good and left an interesing "weave" throughout the meat, then the passion fruit gave it a very subtle wonderful flavor..all was good except I like em more juicy!!

Tip on smelling meat I heard years ago was , "Sniff twice in a row , If that second sniff gives you pause , you know where the meat should go " or something like that. Meaning that even though aged meat has a distinct smell , it shouldn't gag you on the second sniff.

I way over did it..I have no idea what I was thinking...iI yanked it like at 160..duh...shoulda woulda next time for sure, will be off like at 130/135 then to a nice resting place....
