well I set off today with the intent of smoking baby back ribs, but changed my mind. I opted for 2 trip tips, a pizza fatty stuffed with pizza blend cheese, olives, pepperoni, and marinara sauce. I usually use 2 pounds of sausage for the fattys but tried a one pound instead, Jimmy Dean reg. I can tell I am going to have a blow out at some point seems a little thin. I then found some Good ole USA grown Japs and decided to try out my new stand I acquired from Cabelas. They are stuffed with shrimp and cream cheese, then sealed with a half strip of bacon. Here they are after inserting the fatty and japs. the Tips have been smoking at 250 for about 1 hr and 45 min. at this point. Using Hickory chunks for smoke.
