Here's the original recipe

INGREDIENTS:
1/2 onion, chopped
1 green bell pepper, chopped
1 bunch green onions, chopped
2 jalapeno peppers, chopped
1 tablespoon minced garlic
1 pint cherry tomatoes, quartered
1 (8 ounce) bottle zesty Italian dressing
1 (15 ounce) can black beans, drained
1 (15 ounce) can black-eyed peas, drained
1/2 teaspoon ground coriander
1 bunch chopped fresh cilantro

DIRECTIONS:
1. In a large bowl, mix together onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve.


Now here's how I do it.
I cook up one bag of black eyed peas and 1 bag of black beans.
I pretty much double the rest of the ingredients.
Instead of cherry tomatoes I just dice up regular tomatoes.
 
Here's mine. Pretty easy and REALLY GOOD. Use Tortilla scoops...

15oz can Black Eyed Peas, drained and rinsed
7oz can White Corn, drained and rinsed
1 10oz can Rotel Original Tomatoes and Chilies, drained – NOT RINSED
1 Green Pepper, diced small
1 Yellow or Vidalia Onion, diced small
1 bunch Cilantro, diced small
½ 8oz bottle (use 4oz) Kraft Zesty Italian Dressing
1 tbsp. Lemon or Lime juice
1/2 tsp. Black Pepper
1/2 tsp. Salt

Combine ingredients well in bowl, chill, serve with tortilla chips.

Its really good if it chills at least 4 hours.

This stuff is addictive!!

1 can purple hull peas, rinsed & drained
1 can crowder peas, rinsed & drained
1 green bell pepper, finely chopped
1 yellow bell pepper, finely chopped
1 can Mexicorn
4 green onions, finely sliced
1 medium sweet onion, finely chopped
2 4 oz. jars diced pimento, drained
1 can diced ripe olives
½ cup flat parsley, minced
¼ cup cilantro, minced
2 garlic cloves, minced
1 chipotle pepper in adobo sauce, minced
1 bottle Tangy Tomato Bacon dressing

Mix all ingredients together in a bowl.l
Serve with Tortilla chips or crackers.
 
Scoop chips and some chopped up Fatty mixed in, Now you're talking Nachos!
