Texan in Pittsburgh

    I just bought a Traeger at Costco and after practicing on several chickens, I just did my first brisket today and it came out really well.

    I lived my whole life in Texas (Houston, Austin and Dallas) and always kind of took good smoked beef brisket for granted because it was everywhere.  5 years ago we moved to Pittsburgh and up here they (cover your ears now if you are sensitive) boil or braise the brisket most places, if you can even find it at all.  BBQ up here is pork, which is great too, but we missed brisket.

    I am really enjoying this, and I like this website and forum because it has a lot of great information for learning how to smoke!

    Welcome to the site and congratulations on your new smoker.  Smoking your own briskets should help ease the homesickness.

    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...
