Sweet Chops is in the house..

  1. Hello everybody. I started smoking about six months ago and cant stop. Luckily I live in Southern Cali and there are plenty of sunny days to do so. I started with an ECB then found this site and made the mods.I then got the 40 inch stainless steel Masterbuilt. It is real nice but I very rarely get the desired smoke ring on my meat. I am trying to find a buyer for it so I can get a more traditional pit. Thanks for all the great tips from the forums....[IMG]

  3. hey guys I am a kinda newbie, Ive had a Chargriller pro with side firebox, for the last 2 years and still figuring it out.
Ive done over time a few pulled pork, brisket, turkey, chicken, venison as well as pork tenderloin. I basically just experiment. I started out with a Little chief, then moved up to a Bradley but modded it. Now with my chargriller I need to mod more as well. I have added some high heat thermometers and two regular ones so I know the temp in pretty much every level of my smoker. Ill post pics soon.
I am looking to upgrade sometime soon but I would like to do a few competitions before hand. just to see.
most of the meat Ive done has been tested out by the guys i work with at the firehall, they are great critics, you will know if it is not good hahaha
I am always looking to improve so anyone with any tips or advice please feel free to IM me
I am just outside of Toronto Canada

Welcome to SMF Sweet Chops BBQ, sorry you aren't happy with your MES, maybe the WSM is the choice for you. Personally for me the MES 40" is the perfect home smokin tool, yeah no smoke ring but who cares as long as the Q is great tasting. However, I would like to add to my collection a stick burner, just for the challenge to manage it and maybe achieve another level of Q excellence. But I have to say I haven't tasted anything yet that beats the Q coming out of my MES, but when I'm doing the cookin in the backyard who needs to go out for Q, so not getting to try other Q very often.
