Summer Sausage and temp

  1. I am getting ready to make summer sausage again.  I am afraid of a fat out so if I do not let the temperature of the smoker get over 165 degrees the sausage will still get to an internal temperature of 152 degrees.  It will just take longer correct.

    I do mine to 170 never over and I never have fat out, I will be doing some zesty summer sausage today in my smoker 2 1/2 X 18" fib casings should be good weather here
