Smoking Turkey - Basics, tips, rules fo thumb, etc

    Hi,

    Going to be having the immediate family over for Thanksgiving. There will probably be about six adults and three kids so we will probably be smoking a small turkey (6 -8 lbs).

    I have smoked and used the 3-2-1 rule and that worked well. I was wondering if there were similar rules of thumb or tips or recipes anyone might be willing to share?

    I have a 30' Smoke Hollow i was planning on using.

    Any advice is greatly appreciated.

    Smoke it until the internal meat temp of the breast is 165 & the thigh is 175. I would do it beer can style.
