smoking a chicken

    I am smoking a chicken today. Haven't done one since last summer and can't remember how long it will take. It has been brined. It weighs 4.5 pounds.

    @250.....it will take 4hrs.....165 internal temp. give or take some time to temp fluctuation

    of course your skin will remain rubbery at that smoking temp. I usually do 275º for around 2 1/2 hours, then pop the temp up to 325º for the last hour. This will crisp up the skin for you some. I actually go to 175º internal. My wife wants her chicken DONE !![​IMG]

    The few that I have done I've smoked at 250 for approx 3-3 1/2 hrs (depending on weight) until internal temp is 155 in the thickest part of the breast. Then I crank it up to approx 300-325 degrees to crisp up the skin (which usually takes about an hour). I then pull it at 165 and foil it for 20-30 minutes. However, if you pull it at this temp you will have a real juicy chicken, but if you don't like seeing 'red' juice you might pull it at 175 and then foil.

    4 - 5 hours smokin at 250° ta a breast internal a 170°.

    Personelly I cook it to about 165 in the breast. Or 170 in the thigh. Time may differ due to weigh but 3-4 hours.
