Forgive me if this has already been tried and posted but I half to post this. My neighborhood had a Chili cook-off today and I thought about fixin some. Since this is my first time really doing up some good chili I had a thought about adding some smoke flavor to it. So I got a generic recipe that had the beans, tomatoes, brown sugar, ketchup, garlic powder and a healthy dose of Tony Chachere's seasoning. Then I cooked up some sausage and ground beef. After that was cooked I added them together and placed in the smoker with mesquite wood. I smoked the beef and sausage for @ 1.5 hours. Boy, let me tell you that is some good Chili. It taste GREAT. Of course now I feel like I have to add some xtra stuff to it.
Unfortunately I did not submit this to the cook-off. I feel like I have to do some more experimenting before I take on the experts.
