Smoked Chili

    Forgive me if this has already been tried and posted but I half to post this. My neighborhood had a Chili cook-off today and I thought about fixin some. Since this is my first time really doing up some good chili I had a thought about adding some smoke flavor to it. So I got a generic recipe that had the beans, tomatoes, brown sugar, ketchup, garlic powder and a healthy dose of Tony Chachere's seasoning. Then I cooked up some sausage and ground beef. After that was cooked I added them together and placed in the smoker with mesquite wood. I smoked the beef and sausage for @ 1.5 hours. Boy, let me tell you that is some good Chili. It taste GREAT. Of course now I feel like I have to add some xtra stuff to it.

    Unfortunately I did not submit this to the cook-off. I feel like I have to do some more experimenting before I take on the experts.

    Sounds delicious.My sister is in terlingua cooking at the super bowl of red chile.She is a board directop for CASI.No beans in that texas style chile...

    First off your chile sounds great with some smoke flavor adde in. Now you should have entried the cook off cause you never know what it's going to take to win and the bragging rights go on and on for a year don't they. Now Alex your sister is on the board of directors of CASI and competing in the super bowl of chili do you have a brother named Rick by chance to. You know Rick Bayless.

    Her competition chile cooking and the comp bbq i do as well is one reason i grow so many chiles my friend....[​IMG]
