Smoked a big ol chicken

    88 cent a pound roaster chickens this weekend. 2 big games on Sunday . That's all the excuse I need to get the smoker out!



    Technically , this was a beer can chicken , but A. It was a diet coke can and B. it was empty...These days I just use the can for stability and I gave up on liquids in the can a while ago. This chicken was liberally coated with salt and pepper and smoked for just over 2 hours on the WSM. No water pan , bird on the top rack.300 degrees the whole time.




    As usual , the chicken was incredibly moist and delicious. I like the upright roasting method a lot. I feel like the chicken gets cooked perfectly even all over.

    Looks good.

    Hows the potato on the smoker.

    I have thought about trying them.

    I like them a lot. They take on a nice smoke flavor. The skin is maybe not quite as crisp as when you do them in the oven , but to me that's not a huge drawback.

    Nice looking bird...... We don't see roasters around here much, sad cause I really liked 'em.

    I bet you made some smiles with that bird!

    Thanks , guys. We ate the other half of it tonight and it was still so nice and moist. Sweetie's getting used to smoked meat. I didn't hear any comments except how moist the white meat was. :biggrin:

    Great looking bird, nice looking plate! I haven't cooked a whole chicken lately and have one in the freezer, maybe I'll get that guy thawing! Like you I haven't used a can with anything in it for a longtime. Never really noticed much of a flavor difference.

    Exactly. But ...funny story. This was an 8 lb chicken and it was kind of flopping over on the stand so I took a diet coke can , punched some holes in the bottom and a few extras in the top and the chicken stood tall and straight. That can worked well!

    Nice looking bird!  I did my first upright chicken last weekend and I can't stop thinking about it. I think I like the chicken better than my pork.

    The wife is out of town this weekend, hmmm....

    Dude. You gotta try it a few times. Whether or not you believe that the liquid helps , it is no doubt a terrific way to cook a whole chicken. To me , it's as good as rotisserie chicken without the machinery .

    I am a fan of spatch chicken.

    What does cooking on a can supposed to do?

    The theory is that you set the chicken on a half can of beer and the beer (in theory) evaporates and this moistens and flavors the meat......BUT ....the new thinking is that the beer never truly gets hot enough to evaporate , so the benefits are doubtful (if you believe that school of thought). If you go to amazing ribs . Com 's website there's a lot of info on it.
    For me , I think you do just as well to set the chicken up on the empty can with some holes punched in the bottom and I feel like this channels the heat up inside the chicken helping it to cook from the inside out.
    Plenty of people swear by the beer can method , and you should make up your own mind. It does come out good , no matter which route you choose...it's a win-win!
