Shoulder on WSM 22.5

    Just got a new WSM 22.5 for a birthday present! Used to have a MES30 but wanted to upgrade for a while. Finally got it and ready to smoke.

    Threw on a pork shoulder the first weekend I got it. Started of with 4 hickory chunks, full water bowl, and all vents open. Read the WSM runs hot the first couple smokes and that's very true. Couldn't keep the thing below 275 with 2 bottom vents barely cracked and top vent wide open. Figured that's where she wants to be so let it ride. Even jumped up to 300 toward the end of the smoke.

    Ended up cooking it for 10 hours and wrapped at the end in a cooler. Turned out great and the wife said it was the best one I've done yet. Can't wait for more smokes. Got a brisket coming up next weekend.

    That looks like a perfect way to break in a new smoker.

    Congratulations on the new WSM.  I've got an 18.5 and like it a lot.

    Be careful with them bricks under the legs.... one good bump and you could have your hands full.

    Nice smoke!  [​IMG]   Once soot covers the shine on the WSM, heat control will be a non issue.  After my first few smokes, I didn't need water in the bowl any longer.  I use one vent on the bottom about 1/4 open, and can roll for 12 hours at 225 without touching it.  If it's windy outside....that is another story[​IMG]

    Thought the same thing about the bricks. Wanted to get it high because didn't know how hot it would get on the bottom. Was wanting to keep it on the deck and get a huge paver for the WSM to sit on. Only other place to put it is in the driveway and don't feel like like going up and down the steps to check on it. Maybe I'll get it worked out one day lol.

    Although I never had the need to check on how hot it gets, I think it should be safe with the heat deflector's help. Check to make sure...
