Rookie from Texas

  1. My name is Jerry and I live in, well pretty much, smack dab in the middle of Texas. It's hot, dry and we rarely ever get rain. But I like it and it's home for now. I have a custom-made smoker that I won in a raffle. It's made of 24" well casing and about 6 1/2' long (including the fire box). It sets on a 12' utility trailer with a Rigid strong box in the front for storage. I talked smack saying if I ever won it, I'd sell it in a heartbeat. But when I heard my name, I knew I had to keep it. I can't lie.., I'm hooked!!!!!
    I've been smoking for about a year and a half and have tried smoking everything from a whole turkey, brisket, ribs, sausage, & skirt steak. I even helped a friend smoke a whole young hog for a good ol' East coast "pig-pickin"!! I've been very fortunate to have been offered a lot of good advise. I'll keep trying and experimenting.

  4. Hey Mike, thanks for replying. I'm not only new at smoking but new to the whole forum thing. Good to hear from you. I live in Big Spring so I'm just a few hours West of you on I20.
    Ya, the rain was great. I think we ended up getting about 3" over all. It was a good slow rain, but we're so darn dry here. Lake Thomas, Ivey and Spence are so low that we're still on water restrictions.

    Well there is plenty to learn from this forum. Youll figure it out pretty easily. The search bar is the key. If you got a question.. just type some key words, grab a 6 pack and start reading away ;)
    And I was just out that way for a job a few weeks ago. Was in Midland.. it was like a sandstorm the whole time I was there It was so dry.
  6. Congrats on winning a smoker, If you have been smoking for a year, you probably have it figured out (the way your smoker cooks) AS everyone is telling you there are a lot of advice out there. I have been BBQing for over 35 years. I have tried lots of different rubs, wood, temp, time so on and so on. What I finally decided and settled on is what I liked and my family and friends like. That way everybody is happy. When I do ribs, I usually do part spicy and sweet and part hot and dry. One son and grandson likes dry and hot everybody else likes spicy and sweet. I usually do the 3-2-1 method, I'll adjust for Baby back. I have started doing my brisket a little different, same seasoning I have always use Salt, Pepper and a little Tony's but after about 5 or 6 hours I wrap in butcher paper for the rest of the cook. Really keeps the bark without getting soft (like in foil) helps not to over smoke and keeps in some moisture. I cooked 4 racks of Spares and a brisket yesterday ribs turned out great using the 3-2-1  and the brisket was moist tender and had a nice bark. I usually run my smoker at 225 I prefer low and slow.

    and you will probably get 10 replies with 11 different answers. That is because their
    are so many different ways to make great Q We all have our own taste.
