Roast Beef (with Q-View)

  1. On Wednesday, I picked up a 4+ pound package of eye round beef at Costco. I marinated it in Worcestershire sauce, then rubbed it with some seasonings I put together...

    2 teaspoons of Paprika

    2 teaspoons of Black Pepper

    2 teaspoons of Kosher Salt

    1 teaspoon of Powdered Garlic

    1 teaspoon of Powdered Onion

    1 teaspoon of Crushed Coriander

    1 teaspoon of Dill

    1 teaspoon of Red Pepper Flakes

    ...and left it in the refrigerator for two days. Last night, I put both pieces in the smoker and smoked them with apple and cherry chips to an internal temperature of 130 degrees. At this point, I pulled them from the smoker and let them rest for an hour on the kitchen counter, then refrigerated them overnight. This morning, I pulled out the slicer and sliced up both pieces of beef. As an experiment, I sliced one with the grain and one across the grain. After handing out some pieces to my family, I was told that although both pieces were tender and flavorful, everyone preferred to chew the slices cut across the grain. I figured this would be the case, but it was an overwhelming majority, so I will NEVER cut my future projects with the grain. That's exactly why we all conduct these experiments in the first place, right? [​IMG]

    4+ Pounds of fresh Eye Round Beef purchased at Costco.


    Bathed in Worcestershire, rubbed and ready to go into the refrigerator for a couple of days.

    This is a close-up of the rub. It's the most colorful rub I've ever put on anything I've ever cooked! The wife says it looks like Christmas. I think she's been hitting the wine bottle too hard. [​IMG]

    Tomorrow, we're getting some rolls and having roast beef sandwiches for lunch. I can hardly wait!!!

    They all look spot on but the across grain ones look over the top. I bet they rocked. Love it!

  9. rbranstner, thank you! Surprisingly, for my first attempt ever at roast beef, it tastes out of this world! We're all very happy with the results. I couldn't have done it without the assistance of SMF's gang of pros!!!

    rick, thank you! Yes on the sandwiches, but I can't on the beer (I can only wish). It's a diabetic thing, but the doc says I can have all the whiskey I want. [​IMG]By the way, I'm in Kendall. Just look for the thin blue smoke plume in the sky and follow it down to the ground. You'll find me there! LOL!

  10. It wouldn't be right if I didn't end this thread with a post of an actual roast beef sandwich, right? LOL! Anyhow, here's a quick sammie that the wife put together for me on sliced french bread. She put a little mayo in there along with a little spiced mustard. These are HEAVENLY!!! I've already distributed some to my in-laws and my parents. My mom called me up this morning and told me that she wouldn't be unhappy if I made some more. Coming from my mother, that's one hell of a compliment! Also, according to my wife, all she did while I was out of the house yesterday was eat from the slice pile. Overall, I'm ecstatic at how this particular smoking project has gone and I will definitely be doing it again!

    driedstick, I apologize for not putting that information in my original post (I always forget something!). I smoked at 225 degrees to an internal temperature of 130 degrees. I believe the IT hit at just under two hours.
