Made up two racks of ribs and some pork sushi on Sunday on the Rec Tec. Turned out pretty darn good.
Here is where I got the idea for the roll. Basically a mini fatty.
Crickets. . . . . .Oh well.
Sorry I just saw this. What is in that roll?
Simple - Pork Sausage and pepperjack cheese wrapped in bacon to mock a sushi roll. Could substitute with any meat or cheese. Baste with a little bbq sauce a couple times near the end of the cook. Can roll in crushed up fritos or the crispy onion things when all done to give it texture. Good appetizer.
Ok I watched the vid. I always thought a sushi matt would be good for rolling fatties. I love swiss if that's what is in there. nice.

You won't be disappointed. Actually a bit easier to make than a fatty - no weave and smaller.

Jeff's directions in his book for the weave make it so easy. I can put one together in a few minutes now.
