PRIME RIB  (My Newest Best Ever!)

I've made a lot of Prime Ribs, and this is the 3rd time I called one the Best ever. They have all been great, but I called one of them "The Best Ever". Then I made one I thought was better, so I called it "The New Best Ever". Now the one I made yesterday was even better than that one, so I'm calling this one "My Newest Best Ever".
I don't know what else to do---They just keep getting better & better!!!

If you want to follow how I did this one, I used the same rub (except I left out the salt), and I used the same times & temps. The only thing I did differently was I put this one on a cooling rack in a foil pan, because I tested that on another Prime Rib, and it had no effect, and makes cleanup easier.

So if you want to see how to make one like this (Step by Step), go to this link:

    Thanks For Looking,

Wire cooling rack & Foil Pan ready to go:

One boneless Prime Rib with crosshatch cuts, ready for Rub. Was 6.39 pounds before removing bones:

All rubbed & ready for over night in the fridge before smoking:

In the MES 40, and beginning the heating & smoking:

Getting two rows of Hickory pellets going good in my AMNPS:

Plenty of smoke going. Any more than that would be too much:

    Ready to remove from smoker:

    Ready to carve:

    All sliced up:

Supper Fit For A Bear !!!

Sorry, Bear. This beef looks so good it has to be illegal and I have notified the authorities. So, if some Royal Canadian Mounted Police show up, just give them the beef and we'll check out whether it is too good to be legal.
