Pork Picnic question

  1. Hi all, I posted in the Roll Call section a pic of my picnic that I had cooked the other day. Here is my question about that "almost ruined" meal. I was of the thinking that I should bring it to 165 IT and then remove from the BGE, foil and put in ice chest for an hour or so. Not sure where I got that from, but that's what happened. I wasn't pleased with the results, but still tasted decent. Reading other posts since, how bad did I goof up eating that thing???

Basically I was looking to do something pork that I could slice up versus PP and that picnic looked like it would meet that. Hindsight, yeah won't use that hunk 'o meat again for that kinda meal!!

    Thanks in advance!

Yea for slicing you have to get it to at least 195.

  3. Thanks Al. I guess since I'm still breathing, that temp was at least not deadly!

  5. Thanks JJ! It was actually pretty tasty and tender. Just not really the dish I was looking for.. Oh well, try, try again right?!

The temp was safe to eat, just not as tender as it would have been, had you taken it to 190. And you probity had more fat and such at that temp.
