Great forum, have learned much already. I have the electric ECB but am having some difficulty. A couple of questions for you experts:
  1. Too much heat! I find no matter how long I soak the hickory chunks, they eventually catch fire and raise the internal temp to over 350. Should I look at foil pouches or other contraptions to help eliminate the flame?
  2. How much wood at once? Perhaps too much is my problem with #1

Less is better! Don't add so many you get white bilowy smoke. Sounds like you may need to raise the chips a bit higher too but I don't have an electric ECB I am guessing on the fire. There are a few electrics here they'll chime in soon. Good luck!
 
Welcome to the SMF. We have many members who will be able to assist you shortly. Many od us start out with a Brinkmann of sorts. Hang in there and have fun.
 
Welcome to the SMF, I have a charcoal ECB, I don't soak my chunks and I start with about 3 and then add about 1 per hour. The only time mine flares up is when I'm tending to the meat with it open, goes back out when closed up. Maybe some electric guys will come to your aid
