In the mail yesterday I received the below offer to participate in a study on nitrite supplements. It's being done by the medical folks at the big state university down the road (CU). I was shocked. Based on the rants and raves you hear about nitrite and nitrate, I didn't know that there actually are nitrite supplements.
When I started researching it on the web, you come back to how many "healthy" foods, especially vegetables, have high levels of nitrites. I guess they're trying to see if a nitrite supplement carries the same benefit as consuming the food. I'm not signing up for the study but I thought it was interesting.
