Newbie Smoker

  1. I bet you get lots of newbies right before the 4th of july! I plan to smoke three racks of baby-back ribs on my Weber Genesis grill tomorrow, using the 2-2-1 method. This is my first time smoking anything, and only the 2nd or 3rd time cooking ribs at all. I am an engineer, so I have done quite a bit of research on the basic technique, so I'll be interested to see how well I can apply it for the first time with the equipment I have. I'll post pics and my method!

  3. What are you cooking on?

    I just learned a technique last weekend from an 6 time GC team I plan to try at this weekend's state comp in Lake Placid. The technique is to foil with aguave nectar and rub. Honey if you can't find the nectar. Nectar won't burn as much.

    What I learned -- ribs need to be sweet, red and tender. 5 hours for St Louis, 3 on the pit 1.5 in foil then glaze and set it. I'll do a qView and post my scores as well.

    I am really new to this, but really having fun with it! I'm using a Brinkman electric smoker, a Bradley 4 rack and a Weber Genisis. Turning out some really great Pork Butts, Ribs and Canadian Bacon. Looking foreward to get all of the input here I can absorb
