Welcome to SMF! A fatty is breakfast sausage that is often packaged as "chubs". One of the brands that you hear mentioned a lot on the forum is Jimmy Dean.
Smoking a fatty can be as simple as skinning the plastic wrapper off and putting the sausage in the smoker, or you can use the sausage as sort of a blank canvas. Lots of folks put on their favorite rub before tossing it in the smoker. Most of the really creative stuff you will read about fattys is how folks stuff them.
To stuff a fatty you mash it out flat, spread on whatever you want, then roll it up like a jelly roll and seal the ends. If you do a search, you will find all sorts of Q-view (pictures) of fattys with all kinds of stuffing.

If you have no idea what a fatty is you wouldn't know where to look.
Also, there are unlimited ways to smoke fatties, so what do you include in the sticky.
If you mouse over the word fatty it does tell you the base facts.
A fatty aint gotta be sausage guys! I make mine from lean ground beef stuffed with roasted peppers, dried tomatoes, pepperoni, herbs and cheese. Whatever Im in the mood for. I guess it sounds like a mini meatloaf or somethin. Maybe so but it sure dont last long around here.
Then there's us poor Canadians.
We can't get Jimmy Dean fattys.
But we have Maple Leaf and they have a 1 lb breakfast sausage fatty.(in the freezer section)
Also another brand is available here at Zehrs,which I cant remember the name of off hand.
But,if you have a local butcher like we do,you could buy bulk sausage and make your own Fatty.
