Hey everyone newbie Greylock here. Just got my first smoker wsm 18.5 . First run today I tried 1/2 chickens with brined for 2 hrs smoked til 165f over applewood with a Memphis rub mopped a couple times with apple juice . Kept the wsm at approx 275f took a while to get the temp stabilize it was a little breezy but I finally got it. Came out really good I am very happy with the outcome.
