New to smoking

    Hi from Valley Springs, CA! We live on 5 acres and were left a old offset smoker. It's quiet big and rusty! The grates are gone, (if there are supposed to be any.) so I have a lot of questions but will search thru the forums first. I lit some coals and threw some oak wood on top. Pork butt on the big side. We will see! Have a great day!!

    Welcome to the forums! This is the best place I know for sharing ideas on smoking, grilling, curing, etc. There are plenty of friendly, knowledgeable folks here who really enjoy helping one another.     Ok we need to get a thermometer on this old thing! Do you put logs in for the smoke or has to be chips?
