Hey Ya'll, bamagator here. Born in Orlando, Fl. but now live just east of Mobile, Al. Love grilling and smoking and know I'll learn a lot from you pit masters. Just bought a wsm and smoked 2 pork butts last week. I already picked up good advice, was having trouble getting temp up to 250 but water in pan was cold when starting so that affected the temp. Anyhow, look forward to getting to know ya'll and become a sponge. O, live in bama but always a gator. Go Gators...:)

As to water in the pan. Never fill it up. Better to go 1/2 or 3/4 of the way. You can always add more when needed.
