New to posting but have been reading for a while. Been smoking some butts mostly but going to do a butt and ribs this weekend for a family BBQ. Have an offset smoker. Was wondering if I could ask a few questions as I have already learned so much from the forum. How long should I use wood to smoke the butt and or ribs until switching over to charcoal? Temp for ribs? And method of choice on how to cook em. Any other advice is greatly welcome and will post pics this Saturday when I start the smoke.
