Hey yall! Wife just bought me the mes 30" from bass pro shop. I'm new to the electric smoking but I've been tinkering with a Brinkman propane smoker for a lil while now. It was ok but everything was getting sut all over the food. I was told it was from the propane. So now I have an electric. I've read a few other post and ordered the e course. I've seen a lot about dampers but mine doesn't have one. Also with my Brinkman it has a huge water pan but I've seen someone say not to put water in the water pan on the mes? My wife wants me to try smoked salts and cheese but I don't have the amaze thingy. Is there a way I can cold smoke without it? She also got mesquite pellets for me. I'm use to chips. How should I use those, just put them in the pan like normal? Also can I smoke just about anything I desire? Like vegetable and nuts (of course meats). I'm ready to go smoke crazy here! Throw it at me and I will smoke it up!
